Environmentalists have been fiercely fighting against shark fins on restaurant tables. As the fish population declines, now some U.S. chefs and tech start-ups are offering a new alternative to the delicacy.

Environmentalists have been fiercely fighting against shark fins on restaurant tables. As the fish population declines, now some U.S. chefs and tech start-ups are offering a new alternative to the delicacy.

At the Michelin three-star restaurant Benu in San Francisco, chefs create a gel that resembles shark’s fin, but an even more precise substitute for shark’s fin could someday become affordable to the masses.

The work of alternative shark fin has also led to another potentially more popular product: faux shrimp.

It is replicated through a combination of plant and non-toxic algae-based ingredients.
