Thousands of years ago walnuts were used as toys in China. Now they’re prized as gifts among the elite as a form of hand therapy that’s said to bring good health. Prices have shot up as consumption grows, transforming the lives of nut farmers.

Like gold, farmers are now using walnuts to prevent inflation eroding the value of their money.
