Imagine having to supervise one thousand employees. For most restaurant managers, it might seem like a nightmare, but at the Arroyo Restaurant in Mexico City, it’s just a regular day.

The Arroyo Restaurant is not only largest Mexican restaurant in the world, but also a time warp to traditional Mexican food that is fast disappearing to modern culinary trends.

The restaurant looks like a fortress. There are nine dining rooms, a bullring and a massive parking lot for 600 cars.

But for the restaurant’s general manager Jose Arroyo, its vast size can also be a headache. Arroyo is planning on expanding the restaurant to Texas. He believes that with its large Mexican population, there is a growing market for this traditional Mexican food.
