Insects have eaten in Mexico since pre-Hispanic times, with researchers believing the Aztecs’ diet included up to 100 different bugs and worms before the arrival of the Spaniards. But even though they are rich in protein and in flavor, not everyone may be a fan.

Now, a restauranteur in Mexico City trying to combine this exotic delicacy with modern cuisine and traditional spices, and in doing so, is hoping to attract those willing to break taboos.
