Recipe for Life: Molten Chocolate Cakes

With a bakeries in Amman, Beirut and Washington, D.C., Fadi Jaber is literally spreading sweet bliss around the world. And if Asieh’s reaction to this Molten Chocolate Cake is any indication, the world needs more of Fadi’s decadent creations.

Ingredients:

  • 8 oz (230 g) dark chocolate
  • 2 oz (56 g) butter
  • Pinch of salt
  • 1 tsp (5 mL) vanilla extract
  • 4 egg yolks
  • 3 Tbsp (37 g) sugar
  • 2 Tbsp (15 g) cocoa powder
  • 3 egg whites
  • 3 Tbsp (37 g) sugar

Directions:

Melt dark chocolate and butter in the microwave then set aside.  Add a pinch of salt, plus vanilla extract to the chocolate mixture and stir until combined.

Combine 4 yolks and 3 Tbsp (37 g)of  sugar and cocoa powder in a separate bowl. Add the chocolate mixture to this. Set aside.

Whisk 3 egg whites with mixer till frothy then pour in 3 Tbsp (37 g) of sugar and whisk until meringue is achieved. Fold meringue into chocolate mixture.  

Pour batter into ramekins that have been greased and dusted with cocoa powder. Bake at 375 degrees F (190 degrees C) for 12 minutes or until the top is firm.

Makes 6-8 individual servings.
