Colombian chef revives forgotten native tubers

Colombian Chef Oscar Gonzalez travels throughout Colombia in search of unique potatoes that he will serve at his restaurant.

The search led to his discovery that there were more than 60 ​potatoes native​ to Colombia.

Many of them are not genetically modified, and are produced organically.

Gonzalez ​says he has identified more than 150 different varieties that he hopes will enrich people’s palates for decades to come.
